Ο Γιώργος Μίντζας γεννήθηκε το 1969 στην Πάτρα και τελείωσε το 5ο ΓΕΛ το 1986. Σπούδασε Δασοπονία και Τουριστικές Επιχειρήσεις. Εργάστηκε σε ξενοδοχειακές μονάδες στην ευρύτερη περιοχή της Πάτρας καθώς και στη Ρόδο, τη Μύκονο και την Κρήτη. Έχει επίσης εργαστεί στο Δασαρχείο Πατρών και στο Δασαρχείο Καλαβρύτων.
Είναι Εργολήπτης Δημοσίων Δασοτεχνικών Έργων Γ τάξης. Έχει μια κόρη, την Εβίτα.
